Allison's Ginger Cake   

Allison's Ginger Cake

Ingredients:
2 1/2 cups all-purpose flour
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
1/4 tsp. white pepper
1 cup sugar
1 cup peanut oil
1 cup molasses
2 large eggs
2 tsp. baking soda
1 cup boiling water
1/4 cup fresh grated ginger

Preparation:

Preheat the oven to 350 degrees. Butter and flour a 9x13" baking pan. Sift flour and spices together and set aside. In a large bowl, combine the sugar, oil, molasses and eggs. Beat until well blended. Add the dry mixture and mix well. Stir the baking soda into the boiling water and then quickly add that to the batter. Add the grated ginger and pour into the prepared pan. Bake for approx. 45 min. or until a toothpick comes out clean after poking the cake in the center. Serve with ice cream, my favorite flavor is pumpkin.
